I have two suggestions:

1. Buy a white wine for soaking cherries in. Make a couple batches of Spanish rice (http://www.marissalingen.com/spanrice.html) on the same day or soon thereafter. Throw out a mere few ounces of wine.

2. Use apple juice on the cherries instead.
